Mexican Tacos

Mexican Tacos


  • 1 onion diced
  • 1 bunch cilantro chopped
  • 1 jar of salsa verde
  • 1 lime cut into wedges
  • corn tortillas
  • 1 lb (ish) meat- we like to use beef. I just get whatever is cheapest.
  • oil

Dice meat and cook in frying pan. Fry corn tortillas in hot oil briefly to make flexible. Make sure all other ingredients are cut up and ready. To assemble take one corn tortilla, add meat, onion, cilantro salsa verde, and squeeze lime juice on top. Enjoy.

Grilled Cheese and Tomato Soup

Grilled Cheese and Tomato Soup


  • Bread
  • Cheese
  • Butter
  • Can of Tomato  Soup
  • Milk
Warm up the George Forman. Butter bread, put cheese in the middle. Place inside. While sandwich is cooking put tomato soup in a pan. Add milk and slowly warm up. 

Once everything is cooked. Enjoy.  

Cheesy Potato Soup

Cheesy Potato Soup


  • 1 medium onion, diced
  • 1/2 cup celery, chopped
  • 1 carrot, shredded
  • 1 can chicken broth
  • 1 teaspoon salt
  • dash of pepper
  • 2 cups potatoes cubed
  • 1- 12 oz can evaporated milk
  • 2 cups shredded cheddar cheese
Saute onion, celery and carrot in 2 tablespoons butter until transparent. Combine broth, salt, pepper, and potato in a large soup pan. Add the sauteed vegetables. Cover and bring to a boil. Reduce heat, add evaporated milk and boil gently until potatoes are tender. Thicken with roux (2 Tablespoons cornstarch mixed with 1/4 cup cold water.) Stir in cheese (cheese can be added to taste). 

Kevin's Favorite Chocolate Chip Cookies

Chocolate Chip Cookies


  • 1 Cup softened butter
  • 1 Cup and 2 TBS brown sugar
  • 1 Cup and 2 TBS white sugar
  • 1 1/2 tsp vanilla
  • 3 eggs
  • 1 1/2 tsp baking soda
  • 1 1/2 tsp salt
  • 3.5-4 cups of flour
  • 2 cups chocolate chips
Preheat oven to 375 degrees. Cream butter, brown sugar, and white sugar. Add vanilla and eggs then mix. Add Baking soda, salt, and flour then mix. Mix in chocolate chips. Bake on cookie sheet for 11 minutes. They will not look done, but take them out at 11 minutes, then let them sit on the sheet for a couple of minutes. 


Red Lobster Biscuits (From Scratch)


Red Lobster Biscuits
  • 2 cups flour
  • 1 TBS- Sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/4 tsp baking soda
  • 3 TBS chilled butter (cut into small pieces)
  • 3/4 cup shredded cheddar cheese
  • 2 tsp dried Italian seasoning herbs
  • 1 cup buttermilk (I use normal milk with a tablespoon vinegar)
  • 1/2 cup sour cream (or use more milk)
  • A little melted butter to spread on before and after baking the biscuits

Preheat oven to 450 degrees.
Mix all dry ingredients together. Cut in the butter. Add the cheese and dried herbs. Add buttermilk and sour cream until just sticky. Spoon onto cookie sheet. Brush with melted butter before and after cooking. Cook for 15 minutes or until they have brown edges.
